Ingredients
- 1 lb Strawberries, hulled & sliced
- 1/3 cup Cento Balsamic Vinegar of Modena
- 6 tsp Sugar
- 1/2 Lemon, juiced
- 1/2 cup Mascarpone Cheese
- 1/2 cup Heavy Cream
- 1/2 tsp Vanilla Extract
- 6 Bellino Amaretti Cookies, crushed
Directions
In a saucepan, combine balsamic vinegar, 2 teaspoons of sugar, and lemon juice. Stir over medium heat until sugar dissolves, then bring to a boil. Reduce heat and simmer until the mixture thickens into a syrup. Set aside to cool. In a small bowl, beat mascarpone, heavy cream, vanilla extract, and 2 teaspoons of sugar until soft peaks form. In a separate large bowl, toss strawberries with the cooled balsamic syrup and 2 more teaspoons of sugar. To serve, spoon strawberries into serving dishes and top with the mascarpone mixture. Finish with a sprinkle of crushed amaretti cookies. Serve immediately or chill until ready to enjoy. Serves 6.
