Preheat oven to 400°F. Trim the green off the carrots and make sure they thoroughly cleaned of any dirt. Coat with extra virgin olive oil, salt, and pepper, spread onto a baking pan. Place in the oven and roast for about 20 minutes, until the carrots become tender and start to appear caramelized. Remove from oven and spread carrots on a serving dish. Drizzle pesto across the carrots in a pleasant manner. Sprinkle pignoli nuts evenly across dish. Serves 4.
