Piselli con Pancetta

A classic old-world Italian side dish that combines salty pancetta with sweet peas and mild mushroom pieces.

Heat oil over medium flame in a large skillet. Add pancetta and cook for 2-3 minutes, then add onions and caramelize. Pour chicken broth, peas, mushrooms, salt and pepper into skillet. Mix well, cover, and let simmer for 8-10 minutes. Remove from heat and transfer to serving dish. Serves 4-6.
