Ingredients
- 3 tbsp Cento Organic Extra Virgin Olive Oil
- 1 lb Organic Chicken Breast, cut into 1-inch chunks
- 1 tbsp Cento Organic Nonpareil Capers
- ½ cup Cento Organic Cannellini Beans, drained and rinsed
- 1 can Cento Organic Quartered Artichoke Hearts (14 oz), drained and rinsed
- 1 can Cento Organic Italian Crushed Tomatoes (28 oz)
- 2 cups Organic Spinach, coarsely chopped
- 1 lb Organic Pasta
- Cento Fine Sicilian Sea Salt, to taste
- Cento Ground Black Pepper, to taste
- ¼ cup Organic Basil, chopped, optional
Directions
Heat oil in a large pan over medium-high heat. Add chicken and brown 3-4 minutes, then add capers, beans and artichokes. Cook an additional 3-4 minutes. Add tomatoes, rinse can with water and add to pan, then cover and reduce heat to medium. Simmer 15 minutes, adding spinach to pan during last 5 minutes. Cook pasta according to package directions. Drain pasta, add to sauce and toss to combine. Top with a drizzle of extra virgin olive oil and basil, if desired. Serves 4.
